This 100% Dolcetto from the Santa Rosalia area in Alba perfectly expresses the essence of its calcareous terroir. Hand-harvested in September, the grapes are carefully selected to highlight the variety’s vibrant fruit and elegance. Fermentation takes place in temperature-controlled stainless steel tanks with an automatic system for pump-overs and cap management, preserving the Dolcetto’s fresh and fruity character.
After racking, the wine undergoes malolactic fermentation and ages for 4 to 6 months in stainless steel, with optional micro-oxygenation to round out its structure. Bottled in the spring following the harvest, it rests for at least one additional month before release. The result is an intense ruby red wine with purple hues, offering floral and ripe red fruit aromas.
On the palate, it is dry and well-balanced, with a characteristic almond note on the finish that enhances its typical identity. This Dolcetto is an excellent match with meat-based main courses, yet versatile enough to enjoy throughout the entire meal.
