Canonica Vini's Gavi di Gavi DOCG is a magnificent expression of the famous Cortese grape from the province of Alessandria, in the heart of Piedmont. This wine, from the municipal area of Gavi, reflects the masterful tradition and craftsmanship of local winemakers. The vineyards are situated on characteristic white soils, which nourish the grapes in a balanced way and contribute to the wine's elegant structure.
In the glass, the Gavi di Gavi shows a bright straw yellow color with slight greenish glints. The aroma is refined and delicate, with primary aromas of apple and pineapple that develop over time into subtle notes of sweet almond. On the palate, the wine presents itself dry, fresh and harmonious, with lively acidity and a pleasant mineral touch that provides refined complexity. The wine possesses an alcohol content of 12% and is best served in a large glass at a temperature of 8-10°C.
Thanks to its fresh character and mineral undertones, this Gavi di Gavi is the perfect accompaniment to traditional Ligurian cuisine, pairing excellently with fish dishes, seafood and light starters. When derived from riper grapes, this wine also offers wonderful aging potential, with elegant tertiary aromas developing during bottle aging.
