The Brut172 X Domain Holset Blanc de Noirs 2021 is an exceptional sparkling wine that showcases the power and finesse of Limburg terroir to perfection. This brut nature is made entirely from 100% Pinot Noir, sourced from chalky vineyards in Fromberg and De Planck. The grapes were grown sustainably, harvested by hand and pressed directly as whole bunches. Only the purest part of the juice - the cuvée - was used. Vinification was carried out using the traditional method, with special maturation of the base wine: 50% fermented and aged on ceramic, 36% on French oak and 14% on stainless steel.
After the second fermentation in bottle, the wine has matured for no less than 30 months sur lie, adding depth, elegance and a refined mousse. No dosage has been added, bringing out the pure expression of the grape, soil and vinification to full effect. On the nose, this Blanc de Noirs opens with refined aromas of red fruit, citrus, toasted nuts and brioche. On the palate, it shows layered and powerful, with fresh acidity and a dry, long finish.
This wine is not only a festive aperitif, but also a wonderful companion to elegant dishes. Think smoked duck breast, tuna tartare, scallops with cauliflower cream, or a cheese board with hard cheeses like Comté or aged goat cheese. With a production of only 1661 bottles, this is an exclusive cuvée that stands for craftsmanship, terroir and pure class.
