The Corvina Veronese IGT from Cantina Sabaini is an elegant and balanced red wine that draws its character from the rolling hills of Illasi and Oasi Musella, in the province of Verona. The vineyards are situated at an altitude of 175 meters and benefit from both a northeasterly and southerly exposure, allowing the grapes to ripen perfectly. The Corvina grapes are harvested by hand in October, just as they reach phenolic ripeness. The soil, rich in alluvial deposits and pebbles, gives the wine a subtle minerality and freshness.
After destemming and crushing, the grapes are fermented for eight to ten days at controlled temperatures of 22 to 26°C, followed by a gentle pressing. The wine is then aged in stainless steel tanks to preserve its pure fruit expression. In the glass, it reveals a ruby red color with purple hues. The nose is refined and intense, with aromas of ripe red fruit and subtle spicy notes. On the palate, the Corvina Veronese is pleasantly fruity, smooth, and perfectly balanced, with a harmonious finish that invites you to the next sip.
This wine pairs beautifully with flavorful dishes such as pasta with tomato sauce, roasted meats, or medium-mature cheeses. Corvina also demonstrates its versatility with a mushroom risotto or a spicy sausage dish. Serve slightly chilled at 16–18°C to fully appreciate its fresh fruitiness and soft texture.
