The Nuits-Saint-Georges 1er Cru "Les Chabœufs" 2023 from Domaine Désertaux-Ferrand is an impressive Premier Cru from the heart of the Côte de Nuits. Sourced from 50-year-old Pinot Noir vines, this wine combines power, elegance and refined structure at a high level. The small production and careful manual harvest create a wine with distinct terroir character and great ageing potential.
On the nose, the wine opens with intense aromas of ripe cherries, dark red fruit and delicate spicy notes. On the palate, it shows deep and concentrated, with a wonderful balance between fruit, fresh acidity and elegant tannins. Traditional vinification with cold maceration and fermentation on natural yeasts gives the wine extra complexity and finesse. The wine is then aged for 12 months in fine-grained oak barrels, about 30 per cent of which are new wood, providing extra structure, depth and subtle wood influences without overpowering the fruit.
This Premier Cru pairs excellently with refined game dishes, red meat, truffle dishes and mature cheeses. Thanks to its structure and concentration, the wine has excellent storage potential and develops beautifully with bottle aging. A classic Nuits-Saint-Georges Premier Cru full of depth, elegance and Burgundian precision.
