This 2024 Valpolicella Classico Bio is an honest and fresh interpretation of Valpolicella as it was meant to be: light-hearted, pure, and imbued with drinking pleasure. Sourced from the classic heart of Valpolicella, the grapes grow on south-facing, terraced hills at an altitude of approximately 300 meters. The soil is rich in limestone and clay, with marine deposits that create tension and finesse. The blend of 45% Corvina, 35% Corvinone, and 20% Rondinella gives the wine its characteristic balance of fruit, freshness, and spice.
The wine is vinified entirely naturally, without the use of selected yeasts or oenological interventions. Fermentation begins spontaneously using only indigenous yeasts, using only the free-flowing juice. This results in a light-colored wine with bright aromas of red berries, cherries, and subtle floral notes. On the palate, it is fresh, juicy, and energetic, with a light structure and an invigorating finish that invites you to the next sip.
Thanks to its low alcohol and lively acidity, this Valpolicella Classico is an ideal wine for informal dining. It pairs beautifully with light dishes, summer lunches, or simply enjoyed on its own. Served between 10 and 20 degrees Celsius, it truly reveals its fresh, uncomplicated character.
