The "Eccentrico" is a red wine named for its original and distinctive character, a creation by Marcel Zanolari that deliberately deviates from trends and conventions. Made from red grape varieties from the Piedmont region, with a yield of approximately 60 quintals per hectare, it grows on clay-limestone soils with a southwesterly exposure. This wine is a statement of individuality, born from traditional Guyot pruning with short pruning and low yields, which results in a concentrated and unique flavor.
With a lighter ruby red color, the "Eccentrico" offers a delicate and refined aroma, blending spicy and floral notes – think subtle spices and flowers that exude elegance. The vinification is pure and natural: after light destemming and pressing, it ferments without added yeasts in stainless steel tanks, with a short maceration of 5 to 6 days. It then ages for 12 months in tanks and 6 months in bottle (75 cl), preserving its freshness and authenticity.
On the palate, this wine is dry, with a pleasant bitterness that underscores its distinctive character, yet remains soft and supple. It pairs beautifully with light dishes such as poultry, pasta with herb sauce, or soft cheeses. Serve it at 16-18°C to appreciate its delicate aromas and eccentric character – a wine for those who love an unconventional, natural red wine that surprises and intrigues.
