Dot is an expressive and refined sparkling wine from Domain Holset, made using the traditional method with a second fermentation in the bottle. This brut combines 75% cabernet blanc and 25% johanniter, sourced from sustainably managed vineyards in Holset. The grapes were hand-picked and pressed directly, ensuring maximum freshness and precision in the glass. The base wine is fermented and aged on stainless steel and blended from two vintages - 2020 and 2021 - for extra depth.
On the nose, Dot is aromatic and lively, with notes of apple, citrus, gooseberry and a hint of tropical fruit. On the palate, the wine is fresh, elegant and fruity, with dusty aromas, delicate acidity and a subtle mousse. The dosage of 4 grams per litre keeps it beautifully dry but accessible. With a pressure of 6.6 bar and an alcohol content of 12.5%, Dot offers tension and balance.
After a 24-month maturation on yeast, Dot was disgorged in August 2024 and is now ready to shine as an aperitif or companion to light dishes such as ceviche, sashimi or goat cheese. An effervescent calling card from South Limburg soil.
