Product description
Fully vinified from Nebbiolo grapes, carefully selected from our hystoric vineyards. Giupa is born from grapes from our vineyards in the town of the same name near Bianzone. Produced by a late harvest of Nebbiolo grapes (Chiavennasca) left ripe on the plants and harvested by hand in late November. This special wine is due to the favourable microclimate and excellent sun exposure of these vineyards, which are among the most valuable areas of Valtellina Superiore D.O.C.G. A true speciality in limited production.
According to the disciplinary measures for "Valtellina Superiore D.O.C.G." production, a wine can only be rated "Riserva" after a 36-month refinement, 12 of which are in oak barrels. Yield: ~60 q/ha with late harvest in mid-November Vineyards: south-facing hills with sun exposure in the Valtellina Superiore in the municipalities of Bianzone and Teglio, at an altitude between 350 and 450 metres above sea level. Soil type Sandy soil, permeable, moderately deep. Vinification: Fermentation "a cappello sommerso" for about 12 days at a controlled temperature. Aging: This wine is aged in small oak barrels for a minimum of 18 months and then in large oak barrels for a good period. Then a long ageing, of at least 8 months, takes place directly in bottle.
Ageing potential: If stored in an appropriate place, it can age for more than 10 years.
