This 2016 vintage of the “Extreme” wine is the last wine produced by the father of Benoit, the current winemaker. The Extreme wine is the absolute showpiece of Chateau Saint Louis. It comes in a special box that references the winemaker’s Tunisian roots.
The wine was produced in a very small quantity. In the ONWINE treasure room only 10 bottles are available. Once they’re gone, they’re gone.
What is this wine made from?
The Extreme Vin Rouge from Saint-Louis is an organic red wine made from 50 percent Négrette and 50 percent Cabernet Franc that deserves a fine meat dish or a robust cheese.
It is the flagship of Domaine Saint-Louis and the elegant and refined wine experience that reflects the rich tradition of Saint Louis. It is an organic wine full of tradition and complexity from three expressive grape varieties.
The vines grow on soils of boulbène and sandy loam at the surface with clay deeper down. This terroir is ideal for complex and rich wines. You taste that complexity when you pour the wine preferably after giving it some air.
The aromas are diverse with peony, black fruits and notes of wood and vanilla. The pleasant tannin structure adds extra complexity while the wine remains accessible. The grapes are harvested by hand and after pressing vinified with as few added sulfites or native yeasts as possible. The fermentation process lasts 3 weeks and is followed by 13 months of aging in oak barrels which gives the wine complexity and roundness.
