'Seconda Sosta' Bianco Lazio IGT

Product description

Seconda Sosta is an idiosyncratic, contemplative wine born of patience, repetition and deep respect for nature and time. The vineyard lies on volcanic soils with a sandy top layer and tuff beneath, giving the wine tension and a pronounced mineral edge. The grapes are harvested by hand in the early morning and handled gently. A small portion of the harvest is first fermented to create a natural fermentation starter; only days later is the rest of the fruit added. Fermentation proceeds without temperature control, followed by long ageing on fine lees, after which the wine is reintroduced the following year to the skins of the new harvest.

This unique process gives Seconda Sosta its layered, profound character. Aromas of ripe apple, dried herbs and subtle earthy notes intertwine with a faint smoky, volcanic nuance. On the palate, the wine is rich and structured, with a soft, rounded entry and a long, complex finish where saline minerality alternates with ripe fruit. Bottled unfiltered and unfined, the wine retains its pure, artisanal expression.

Seconda Sosta pairs beautifully with refined dishes such as roasted vegetables, mushrooms or white meats in creamy sauces, while also working as a captivating companion to aged cheeses or enjoyed on its own as a meditative wine at the end of the evening. Served lightly chilled, it reveals its tension and depth, each sip inviting calm and attention.
