The Polvaro Chardonnay D.O.C. Venezia is a fresh and elegant white wine from Tenuta Polvaro, an estate with a history dating back to 1681. The vineyards are located in the historic Lison Classico region, just a few kilometres from Venice, on well-draining clay-limestone soils. Sheltered by the Dolomites and refreshed by the breeze from the Adriatic Sea, the area enjoys a mild climate, resulting in grapes of excellent quality with a refined aromatic profile.
To best preserve aromatic character, the grapes undergo cryomaceration at 4-5°C for about eight hours, followed by gentle pressing and temperature-controlled fermentation at 18°C. Depending on the vintage, 70-80% of the wine matures for four months in stainless steel tanks with regular bâtonnage, while 20-30% spends three months in French oak barriques. This gives the wine extra depth and complexity. In the glass, it shows a bright straw yellow colour with golden reflections. The bouquet reveals delicate notes of yellow apple, banana, peach, white flowers and vanilla. On the palate, it is soft and fresh, with a harmonious balance and an elegant finish.
This versatile Chardonnay is an excellent table companion with risotto, baked or grilled fish, roast chicken and fresh cheeses. Thanks to its fresh character and aromatic richness, it is equally suitable as an aperitif or with a refined meal.
