Cantina Sabaini's Soave DOC is a refined expression of the Garganega grape, from the rolling hills of the Val d'Illasi, in the province of Verona. The vineyards are situated at an altitude of around 175 metres and benefit from both north-eastern and southern exposure to the sun, ensuring optimal ripening of the grapes. The vines are grown according to the traditional Pergola Veronese system on alluvial soils rich in rocky material. The grapes are harvested by hand in early October, right at the moment of perfect ripeness, preserving their natural aromas and freshness.
After harvesting, the grapes are carefully destemmed and pressed, after which the first pressing ferments in stainless steel tanks at controlled temperatures between 16 and 18Ā°C. This process ensures the purity and vibrancy of the wine. In the glass, the Soave shines with a pale straw yellow colour. The aroma is refined and floral, with notes of hawthorn and acacia that merge elegantly with subtle white fruit. On the palate, the wine is supple and fruity, with a polished structure and a pleasing intensity that balances the freshness beautifully.
The Soave DOC is ideal as an aperitif and an excellent companion to light starters, fish dishes and summer salads. Its delicate character also comes into its own with a classic risotto with courgette or a carpaccio of sea bass. Serve this wine chilled between 10 and 12Ā°C to fully experience its aromatic purity and fresh elegance.
