Product description
Cantina Sabaini's Valpolicella Ripasso Superiore DOC is an expressive wine that brings together tradition and elegance. The grapes come from vineyards on Monte Castello d'Illasi, in the heart of the province of Verona. At 250 metres altitude, with ideal exposure to both north-eastern and southern sun, the vines grow on calcareous soils with tufa and rocky material. The grapes - Corvina, Corvinone and Rondinella - are carefully harvested by hand in October, right at the moment of perfect phenolic ripeness, preserving the full intensity of the fruit.
After harvesting, the grapes are destemmed, crushed and macerated for 10 to 15 days. The wine then undergoes the traditional ripasso process, re-fermenting on the still-warm skins of Amarone. This gives the wine extra depth, structure and complexity. Fermentation takes place at controlled temperatures of 22 to 24°C and is followed by 12 to 15 months of aging in oak barrels and further refinement in steel. In the glass, the wine shows an intense ruby colour and a seductive aroma of cherries and black cherries, enriched with subtle spicy notes. On the palate, it is full-bodied, soft and enveloping, with an elegant balance between power and refinement.
The Valpolicella Ripasso Superiore DOC is an ideal wine with red meat, game, roasted dishes and mature cheeses. It goes perfectly with an entrecote with rosemary, a stag stew or a plate of risotto with Parmesan cheese. Serve this wine at 16-18°C to fully appreciate its rich aromas and velvety texture.
