The Colline Novaresi DOC Nebbiolo 2020 is a red wine from a 1.5-hectare vineyard in Valle Ceresole, Briona, Piedmont, Italy, at an altitude of 280 meters. Made from 100% Nebbiolo grapes, harvested by hand in crates in early October at a perfect balance of sugars and acidity, it is grown on clayey, medium-textured soils using the Guyot system and a careful, integrated approach. With its deep red color and 14% alcohol, this wine embodies the power of this renowned grape.
Vinification begins with destemming and 5 to 7 days of maceration on the skins in steel tanks, followed by controlled alcoholic fermentation and induced malolactic fermentation during the winter months, with bottling in March or April. Its ruby-red color has light garnet reflections, and its aroma is intense and concentrated, with aromas of cherries and red fruits that form a warm and inviting bouquet.
On the palate, this Nebbiolo is full-bodied and distinctive, with a firm structure and a lingering licorice finish. It pairs perfectly with grilled red meat and meat sauces, its robust flavor beautifully complementing the dishes. Serve it at 18°C in a Bordeaux bottle with a natural cork and savor its rich, authentic character.
