Product description
The 'Cimbrus' Brut is a sparkling wine made from the rare native grape Lagarino Bianco, from high altitude vineyards in Faver (750 m). The vines were partly planted in 1966 and partly in 2000. The grapes are harvested manually, with 48-hour skin soaking and fermentation with indigenous yeasts at controlled temperature. After maturing for 9 months in steel, a second fermentation in bottle follows using the méthode traditionnelle.
What makes this wine special is its exceptional ageing on the lie: no less than 72 months before dégorgement. This gives a rich, complex aroma of citrus, grapefruit and spiciness. On the palate, the Cimbrus is tight and lively, with a dry, mineral finish and a salty touch that perfectly matches its origin from the mountainous Dolomites.
Thanks to its lively acidity and salty structure, this wine is a perfect match for seafood such as oysters or scallops. Also delicious as a festive aperitif. An ode to forgotten grape varieties as well as the power of long bottle aging. Serve chilled at 8-10 °C.
