    Product description

    Cantina Sabaini's Amarone della Valpolicella DOCG is a majestic wine that perfectly embodies the essence of the Val d'Illasi. The grapes are grown with extreme care on the slopes of Monte Castello d'Illasi and Monte Tomelon, at altitudes between 250 and 460 metres. The soils consist of limestone, marl and tuff, which contributes to the wine's complexity and elegance. Only the finest bunches of Corvina, Corvinone, Rondinella and Oseleta are harvested by hand in October, right at the moment of optimum ripeness. The grapes are then left to dry for four to five months, intensifying the aromas, sugars and extracts - the basis of Amarone's sumptuous character.

    After this traditional appassimento, the wine undergoes slow fermentation on the skins, followed by a three- to four-week maceration. The wine then matures for 18 to 24 months in French oak barrels and barriques, after which it undergoes further refinement in stainless steel tanks. The result is a wine of deep ruby colour with garnet red reflections and a seductive bouquet of red fruits on alcohol, mixed with subtle spicy notes. On the palate, it is full and intense, with rich flavours of coffee, cocoa and dried fruit, perfectly balanced by its refined structure and velvety tannins.

    The Amarone della Valpolicella DOCG is an ideal companion to hearty meat dishes, game and mature cheeses. It comes out beautifully with a slow-cooked osso buco, a venison stew or a plank of Parmesan cheese and dried figs. Serve the wine at 18-20°C to fully bring its full power and aromatic depth to life.
