The Auxerrois 2023 comes from the sunny Sonnenberg slope, where loess and a light sandy topsoil ensure optimal ripening and expressive fruit. All grapes were selected by hand so that only perfectly healthy bunches found their way to the cellar. This precise selection forms the basis for a wine that exudes purity and sophistication.
After a gentle 10-hour maceration, the grapes were pressed at low pressure on the traditional basket press, resulting in a fine, pure must. The wine fermented completely spontaneously and was transferred to stainless steel via drop pressure without pumping or clarification. Bottling it unfiltered fully preserves its natural, authentic character.
In the glass, the Auxerrois 2023 shows a fresh and elegant style with subtle aromas of ripe apple, pear and a hint of white flowers. On the palate, it is round and soft, with a delicate balance between its mild, natural residual sweetness and lively, fresh acidity. The mouthfeel is supple and slightly creamy, while the finish remains clean and pleasantly juicy. This versatile wine pairs beautifully with light dishes such as poultry, mild cheeses, creamy pasta dishes, asparagus or fresh salads with whitefish. Vegan, unfiltered and true to nature: a wine that lets the character of its terroir speak clearly and honestly.
