Product description
The Polvaro Cabernet Sauvignon D.O.C. Venezia is a single vineyard wine sourced from vines over 30 years old, a symbol of elegance and generational continuity at Tenuta Polvaro. The grapes are harvested by hand from late September to early October, after a double ripening on the vine, which ensures exceptional concentration and complexity. The vineyard is located in the historic Lison Classico zone on clay-limestone soils, sheltered by the Dolomites and refreshed by the breeze from the Adriatic Sea.
After a skin maceration of 16 to 20 days, the wine matures for 12 months in French and American oak barriques, followed by 24 months in stainless steel. In the glass, it shows a deep ruby red with violet reflections. The bouquet is fruity and spicy, with elegant notes of blackberry and currant, complemented by light spicy hints and nuances of black pepper and coffee. On the palate, it is structured and balanced, with present but soft tannins where wood and freshness blend harmoniously.
A natural choice with roasts, red meat, game and mature cheeses such as Grana Padano, Parmigiano Reggiano or aged Pecorino.
