Campirossi is a powerful and refined Primitivo that combines the rich tradition of Puglia with modern precision. This wine is made from carefully selected grapes from old bush-trained vines, harvested by hand in the first days of September, even before the grapes become overripe. This early picking allows the wine to retain a lively freshness and a nice balance in alcohol and acidity.
After harvesting, the juice undergoes a prolonged contact with the skins of about 10 days, using the technique of délestage. This vinification method ensures maximum extraction of colour, aromas and structure. The wine then rests for at least another six months in bottle to reach its full expression. The result is an intensely ruby red wine with purple hues, which opens on the nose with seductive aromas of sour cherry and pickled cherries. On the palate, it is full and structured, but at the same time perfectly balanced.
Campirossi is best enjoyed with hearty dishes such as game, grilled red meat, stews, spare ribs or with mature cheeses. Serve it at 18°C to make the most of its rich flavours. At 14% alcohol and 6 g/l acidity, this wine shows itself to be a true representative of the best Primitivo has to offer - powerful, elegant and authentically Puglian.
