This Catarratto comes from the high-altitude vineyards of Alcamo Mountain in Sicily, where altitude, calcareous soils and cool mountain air produce wines with tension and precision. The wine is made from 100% Catarratto grapes sourced from vines averaging 18 years old, growing on black mountain soils with calcareous marl. The grapes are harvested by hand in the second week of September and gently pressed to preserve the purity of the fruit.
Fermentation takes place in stainless steel tanks, followed by malolactic fermentation and ageing for about a year in cement before the wine is bottled. This combination of vinification and ageing creates a natural balance and allows the character of the vineyard to fully express itself. The result is a wine that reflects the mountainous terroir of Alcamo: pure, mineral and refined.
In the glass, this Catarratto is elegant and precise. The nose reveals subtle aromas of citrus peel and white blossom. On the palate, the wine is slender, fresh and mineral, with a distinct salty line leading to a dry and refined finish. The wine pairs excellently with grilled fish, seafood, Mediterranean vegetables, light pasta dishes and fresh salads. Its lively character also comes into its own with dishes featuring citrus or herbs.
