Dolcimelo is an elegant white wine from Cantine Miali, from the hills around Martina Franca in the Valle d'Itria. Consisting of Verdeca, Bianco d'Alessano and a small amount of indigenous grape varieties, this refined blend owes its charm to careful vinification. A cold maceration of the skins with the juice is followed by gentle pressing and maturation on the lees for four to five months, partly in traditional stone tanks.
The result is a bright straw yellow wine with green reflections and a delicate aroma in which fresh notes of green apple and yellow citrus emerge. On the palate, Dolcimelo is lively, fresh and flawless, with a fine structure and a long-lasting finish. Thanks to its expressive freshness and subtle aromas, this wine is particularly suitable as an aperitif, but also an excellent companion to fish dishes, seafood or light soups.
Dolcimelo contains 12% alcohol, has a total acidity of 5.5 grams per litre and is best enjoyed at a serving temperature of around 10°C. The grapes are harvested by hand in the third week of September, underlining the precision and quality of this special white wine.
