The DORIAN 2023 is an expressive and characterful white cuvée sourced from several vineyards around Schweigen, where limestone marl dominates the soil. This terroir gives the wine its distinctive tension and mineral-driven structure. The grapes were selected entirely by hand and given 12 hours of maceration before being gently pressed in the traditional basket press. This method produces a particularly pure must and provides the basis for a wine in which power and elegance come together harmoniously.
After pressing, the young wine was transferred via drop pressure to stainless steel tanks, where it fermented spontaneously without any additives. Like all the house's wines, DORIAN was bottled unoaked to fully preserve its natural texture, aromatic depth and authentic character. The cuvée consists of Weißburgunder, Grauburgunder and Gewürztraminer, a combination that results in a surprising interplay of body, fruitiness and subtle spiciness.
In aroma and flavour, DORIAN 2023 shows itself at once strong and refined: aromas of ripe peach and yellow apple are supported by floral notes and a slight spiciness from the Gewürztraminer. The structure is round and full, but thanks to the fresh acidity, the wine remains lively and precise. With 13.5% alcohol, 8 g/l of residual sweetness and 5.5 g/l of acidity, it presents itself as a German Prädikatswein trocken with a wide-ranging character. This cuvée pairs brilliantly with aromatic Asian cuisine, soft curries, poultry, creamy pastas or Mediterranean dishes with vegetables. Vegan, pure and natural: a wine that offers both pleasure and depth.
