Fine Bubbles is a sophisticated sparkling wine from the Saumur appellation, made from 90% Chenin and 10% Chardonnay. The grapes come from 20-year-old vines on clay-limestone soils, and are fermented in temperature-controlled tanks. The wine is then aged on the lie for at least 12 months, which contributes to its delicate mousse and delicate aromas.
In the glass, this brut shows a bright, pale yellow colour with silver sparkle. The bubbles are fine and constant, forming an elegant collar that attests to careful ageing. The aroma is clean and precise, with notes of citrus fruits such as lemon and grapefruit, complemented by fresh accents of green apple and crisp pear. On the palate, the wine is lively and fresh, carried by an energetic mousse. Flavours of citrus and white fruit are subtly complemented by a touch of brioche, a signature of yeast maturation. The structure is tight and mineral, with a long, elegant finish that combines briny and citrus notes.
This sparkling wine is perfect as an aperitif, but also goes well with seafood, sashimi or young goat cheese. Fine Bubbles combines liveliness with refinement and is a pure expression of Chenin and Chardonnay in the Loire. A wine that enchants now, but will also show additional depth after several years of bottle ageing.
