Product description
Maturato is a special white wine produced at Tiberini only in the best vintages. It is made from 100% Pulcinculo, a local grape variety also used for Montepulciano's famous Vin Santo. The name "Maturato" refers to the late harvest: the grapes remain on the vine for an exceptionally long time and are not picked by hand until late October. Thanks to this slow ripening, they develop deep complexity and pronounced aromatic richness.
After harvesting, the grapes are immediately and gently pressed at low temperature. The must then rests cool for a few hours, after which a spontaneous fermentation with natural yeasts takes place. This proceeds slowly and takes place first in small temperature-controlled stainless steel tanks, then in concrete cuves. This precise process produces an elegant, full-bodied and long-lasting taste, in which notes of ripe fruit, spices and toasted almond dominate - typical characteristics of the Pulcinculo grape.
Maturato is a white wine with power and character, excellent for pairing with tasty dishes based on fish or white meat, with delicate starters or pasta dishes without tomato sauce. It also comes into its own beautifully with strong cheeses. In addition, it is an ideal companion for a good book or a cosy get-together. The wine is best served at a temperature between 14 and 16°C and deserves to breathe before pouring.
