The Chardonnay - Lazio IGT from Ômina Romana is an expressive and elegant wine that beautifully reflects the minerality of the volcanic soils of the Castelli Romani. The vineyards are located on a plot with sandy and loamy soils, where the rows are planted in an east-west direction to take full advantage of sun and wind. Thanks to meticulous manual work, tailored to the climatic conditions, the grapes achieve perfect aromatic ripeness that forms the basis for a wine with character, depth and refinement.
Harvesting is done entirely by hand, with the grape bunches carefully selected and destemmed. The berries then undergo a cold pre-fermentative maceration of about 48 hours, followed by gentle pressing. Fermentation takes place partly in stainless steel tanks and partly in new French oak barrels, where the wine matures on its fine yeasts for six months. This period is followed by a further six months of bottle aging, adding harmony and complexity.
In the glass, the wine shows a brilliant golden yellow colour with vibrant reflections. The aroma is intense and layered, with notes of ripe white peach, blossom and subtle toasted nuances. On the palate, it is perfectly balanced, with fresh minerality and a long, savoury finish that betrays its volcanic origins. The Chardonnay - Lazio IGT is the ideal companion to roasted fish, lobster, white meat or creamy pasta dishes, but also comes into its own as an elegant aperitif wine. Serve at 10-12 °C to fully experience its aromas and texture.
