Ômina Romana's Cabernet Sauvignon - Lazio IGT is a full-bodied, velvety red wine made with the same precision and care as great Bordeaux wines. This elegant cuvée perfectly reflects the influence of the volcanic soils and unique microclimate of the Castelli Romani, where warm days and cool nights create grapes with deep concentration and aromatic complexity.
The grapes are harvested by hand, carefully sorted and lightly crushed before undergoing a 48-hour cold pre-fermentative maceration. Fermentation takes place in temperature-controlled stainless steel tanks, followed by a 10- to 15-day skin maceration to enhance structure and colour. Malolactic fermentation takes place in French oak barrels, after which the wine is aged for 12 months in second-year barriques with regular bâtonnage for extra roundness. After blending, it receives a further 12 months of bottle aging, adding elegance, depth and balance.
In the glass, the wine shines ruby red with vibrant reflections. The nose is intense and complex, with notes of black and red berries, chocolate, coffee, liquorice, tobacco and a subtle spiciness. On the palate, it is soft, balanced and persistent, with silky tannins enveloping the palate. The Cabernet Sauvignon - Lazio IGT is a wine of refined power, ideal with roasted red meat, game, stews or mature cheeses. Serve at 15-18 °C to fully appreciate its elegant structure and rich aromatic depth.
