The Chablis Premier Cru Les Fourneaux 2023 from Domaine du Château de Fleys comes from a small vineyard on the right bank of the river Serein. The vines are on south- and south-west-facing slopes, where they get plenty of sun. The grapes grow on Chablis' famous Kimmeridgien limestone soils, rich in fossil shells, which provide the typical mineral tension that this region is known for.
The vineyard has an average age of around 50 years and is carefully tended. The grapes are harvested by hand to select only the best fruit. After harvesting, the wine ferments without residual sugar and undergoes full malolactic fermentation. Vinification and ageing take place entirely in stainless steel tanks, preserving the pure expression of the terroir.
In the glass, the wine shows a bright straw yellow colour with silver-green reflections. The nose opens expressively with aromas of pear, vineyard peach, quince and apricot, complemented by white flowers and fresh citrus. A pronounced minerality with hints of flint, iodine and oyster shell gives the wine its classic Chablis character. On the palate, it is lively and tight, with fresh acidity, an elegant structure and a long, salty finish.
