The Chablis Premier Cru Mont de Milieu 2023 from Domaine du Château de Fleys comes from one of Chablis' most prestigious Premier Cru vineyards. Located on the right bank of the river Serein, this historic vineyard enjoys full southern exposure. Thanks to its sunny location, the grapes ripen optimally, while the famous Kimmeridgien limestone soils provide the distinct minerality that defines great Chablis.
The vines have an average age of around 50 years and are deeply rooted in the region's fossil-rich limestone soils. The grapes are harvested by hand to select only the best fruit. After harvesting, the wine undergoes alcoholic fermentation without residual sugar, followed by full malolactic fermentation. Vinification and ageing take place entirely in stainless steel tanks to preserve the pure expression of the terroir.
In the glass, the wine shows a classic Chablis style: clear, precise and mineral. The nose opens with fresh aromas of citrus, white fruit and subtle floral notes. On the palate, the wine combines ripeness with lively freshness and a pronounced mineral backbone. The long, salty finish perfectly reflects the character of this famous Premier Cru vineyard.
