Baloss is Timorasso with character - a wine that, as the name suggests, is lively, quirky and a touch unpredictable. The grapes are hand-harvested and undergo a careful selection, after which they are briefly chilled to preserve the purity of the fruit. A gentle pressing ensures that only the most refined juice is used. Fermentation is slow in stainless steel at low temperatures, preserving freshness and aromatic precision.
After fermentation, the wine matures for long periods on the fine lie, with regular bâtonnage adding depth and structure. This approach gives Baloss its distinctive balance between energy and roundness. In the glass, it shows a bright, intense straw yellow colour with vibrant reflections, already subtly betraying its ageing potential.
Aromatically, the wine opens refined and layered, with notes of white flowers such as jasmine and hawthorn, followed by ripe fruit of pear and apple. Subtle spicy and mineral accents add extra tension. On the palate, Baloss is fresh and dynamic, supported by lively acidity and a nice saline touch. The structure is round and elegant, with a long, intense and persistent finish that fully expresses the complexity of Timorasso.
