The Polvaro Pinot Noir Sparkling Rosé is a sophisticated and elegant sparkling rosé made from 100% Pinot Noir sourced from the historic Lison Classico zone in eastern Veneto. A carefully produced cuvée where skin maceration of only 10 to 12 hours creates the delicate powdery pink colour with offshoots to onion skin, without disturbing the freshness and elegance. The vineyards lie on well-draining clay-limestone soils and benefit from the mild climate between the Dolomites and the Adriatic Sea.
After fermentation at 18°C, the wine matures for no less than 12 months on lees using the longer Charmat method, giving it a special depth and complexity. In the glass, it shows fine and persistent pearl play. The bouquet is aromatic and seductive, with notes of wild strawberries and pink grapefruit, complemented by subtle hints of fresh yeast and bread crust resulting from the long ageing on the lees. On the palate, it is dry with good minerality and a fresh, citrusy and persistent finish.
A particularly versatile choice with raw seafood, carpaccio, culatello and salty meats, as well as a festive aperitif.
