La Novena Virgen 2022 is a one-of-a-kind wine: a single-varietal wine made from the white Rufete Serrano, a native variety from the Sierra de Salamanca that was only officially recognised as a wine-producing variety in May 2020, following a 13-year process. It comes from four small plots on slate soil (El Bardal, Valdemingones, Los Helechales and El Tesoro) in the Valdáguila Valley near Garcibuey.
After destemming and five days of cold pre-fermentation maceration, the wine ferments spontaneously on its own yeasts without racking the must, as with a red wine. The temperature is kept below 13°C. When the density reaches 1055, the wine is racked and pressed. Alcoholic fermentation is completed in 500-litre French oak barrels. The wine is then aged for eight months in 500- and 225-litre French oak barrels on the fine lees, with weekly bâtonnage.
Amber-yellow in colour with golden glints. Upon swirling, a complex bouquet unfolds, featuring lemon, quince, orange blossom, subtle toasty notes and hazelnut. On the palate, the wine is full-bodied and dense, with pronounced acidity and a slightly bitter finish that adds length. A mature, full-bodied wine with subtle notes of butter and toast.
The wine comes directly from the winemakers, they send the bottles themselves.
