Cantina Santo Iolo’s Merlot is a wine that demonstrates just how well international grape varieties can flourish on an exceptional terroir. The stony soil, the favourable location of the vineyards, the microclimate and the low yields per hectare give this Merlot a level of expressiveness that is hard to find elsewhere.
The grapes are harvested by hand in September and fermented at a controlled temperature in stainless steel. Ageing takes place exclusively in steel and then in the bottle. In the glass, the Merlot is an intense ruby red. The nose offers notes of red carnation, forest fruits and spices, complemented on the palate by sweet and spicy gingerbread. The tannins are present but not overpowering, making the wine immediately enjoyable. It continues to improve with bottle ageing.
Excellent with many types of pasta and medium-textured meats. It also pairs well with cod. Serve at 16°C.
The wine comes directly from the winemakers, they send the bottles themselves.
