The Montaia Rubicone IGP Cabernet Sauvignon is a complex and well-structured red wine from the foothills of Cesena. Following maceration on the skins for 8 to 10 days, the wine is fermented in temperature-controlled stainless steel tanks using selected yeasts. Ageing takes place in three stages: four months in tonneaux, four months in barriques and then four months in stainless steel, which gives the wine a lovely complexity and balance.
In the glass, the Cabernet Sauvignon displays an intense ruby red colour with garnet hues. The nose is intense, warm and elegant, with notes of red pepper, redcurrant, wilted violets and hazelnut. The finish is rich with spices of cinnamon, cocoa, eucalyptus and toasted wood. On the palate, the wine is slightly tannic at first, with a long and lingering finish.
With its powerful structure and complex aromas, the Montaia Cabernet Sauvignon pairs excellently with roast meats, flavourful cheeses and traditional pasta dishes. It also goes particularly well with hearty stews.
The wine comes directly from the winemakers, they send the bottles themselves.
