'Najà' Bianco IGP Terre Siciliane is a refined white wine from sunny western Sicily, from carefully selected grape varieties: Zibibbo, Inzolia and Catarratto. These grapes are harvested by hand on the sand-rich soils around Salemi, at an altitude of 260 metres above sea level. The vineyards are on slopes with a south to south-east orientation, ensuring optimal sunlight and aromatic intensity.
Winemaking begins with gentle pressing and an eight-hour skin soaking at low temperature. Fermentation takes place in stainless steel tanks at 16 to 18°C and lasts 15 to 20 days. This is followed by a 90-day maturation in tanks, after which the wine rests in bottle for another two months. This process results in a wine with a deep straw yellow colour and an intense aroma profile of wild herbs, rosemary and pineapple.
On the palate, Najà is harmonious and dry, with a warm structure, lively acidity and a subtly spicy finish. This versatile wine is excellent with grilled fish, marinated raw fish, delicate starters, spicy main courses with meat or fresh cheeses. Serve preferably at 12°C in a tulip-shaped glass to bring out all the aromatic nuances.

Heerlijke verrassende witte wijn die de tong streelt met haar zachte smaakvolle palet van bloesem, zacht fruit zoals peer en perzik. Fijne afgeronde smaak met niet teveel zuren. Deze wijn met zijn licht zoetje doet het goed bij een licht vis gerecht of pasta met vongole. Het is naar mijn smaak geen "doordrinkwijn" voor in de zomerzon zoals een Sauv. blanc of op RVS gerijpte Chardonnay want daarvoor is deze wijn net niet fris genoeg. Het doet het het beste bij een gerecht.
