The Negroamaro from Cantine Miali's "I Classici" line is a powerful and elegant red wine from Salento, deep ruby red in colour and with a distinct character. The wine stands out for its fragrant intensity, in which aromas of ripe red fruits meet spicy notes of black pepper and juniper. On the palate, it is firm and structured, but at the same time remains supple thanks to its soft tannins and a pleasant, persistent finish.
The grapes are harvested by hand in the third week of September, at the time when they are optimally ripe but not yet overripe. Harvesting is followed by careful destemming and gentle bruising of the grapes. Fermentation and maceration take place in stainless steel tanks at controlled temperature for 12 days, after which the wine is given time to mature - first in steel, then in bottle.
This Negroamaro is an excellent companion to flavourful dishes. It comes out particularly well with roasted or stuffed meat, barbecue dishes or pasta with a rich meat sauce. Serve it at a temperature of 18°C for an optimal experience.
