The 2022 Pinot Noir comes from the Schweigener Sonnenberg and Banholz vineyards just across the French border, where limestone-rich soils with a thin top layer provide mineral-driven and refined character. The vines are around 30 years old and produce concentrated, aromatic grapes of high quality. Harvesting was done entirely by hand, ensuring that only the most healthy and ripe bunches were selected. This careful approach is the basis for a Pinot Noir with finesse, structure and terroir purity.
After harvesting, the wine was fermented in open vats for 16 days, after which the mass was gently pressed in the traditional Korbpresse. The young wine was then transferred via drop pressure into oak barrels, where it matured for no less than 18 months. The spontaneous, uncontrolled fermentation with no additives and the absence of clarification create a pure, unpolished expression in which grape and terroir are fully appreciated. This results in a vegan German Qualitätswein trocken with an alcohol content of 13%, a subtle residual sweetness of 0.8 g/l and 5.2 g/l acidity.
In the glass, the Pinot Noir 2022 presents itself refined and elegant, with aromas of red berries, raspberry, subtle spices and a fine, chalky minerality. The palate is silky but at the same time structured, carried by fresh acidity and soft tannins that give the wine tension and depth. The clean, long finish makes this Pinot Noir particularly suitable as an accompaniment to dishes such as poultry, veal, mushroom risotto, lamb chops or grilled vegetable dishes. Serve at 15-18 °C to let its fresh fruit, elegant structure and mineral finesse speak fully.
