Santoiolo is Cantina Santoiolo’s flagship wine, and shares its name with the estate itself. This is no coincidence: the name inextricably links the wine to the place from which it originates. ‘Santo Iolo’ probably derives from the Latin ‘sanctum aiolum’, meaning a designated, enclosed place that is ‘sacred’ – something special, chosen. And that certainly applies to this terroir in Narni, which has been ideal for viticulture for centuries.
A blend of 60% Cabernet Sauvignon, 30% Merlot and 10% Syrah, fermented at a controlled temperature in stainless steel, followed by malolactic fermentation and 12 months’ ageing in steel. This is followed by 12 months in medium-toasted French oak barriques, both first and second use, with each grape variety vinified separately. Finally, the wine is aged for at least 12 months in the bottle. In the glass, the Santoiolo is a luminous ruby red. The nose offers complex aromas of ripe red fruit, sweet spices and bright balsamic notes. On the palate, the wine is warm and full-bodied, with good freshness and pleasantly astringent but not harsh tannins. The red fruit and spices are clearly evident in the long finish.
The Santoiolo is made for the great dishes of Umbrian cuisine: game, red meat and stews. Despite its power, it is also excellent as a wine for contemplation. The label was designed by the Narnese artist Mauro Pulcinella. Serve at 18°C.
