Cantina Santo Iolo’s Syrah thrives on the mineral-rich fossilised seabed of Narni. The bone-rich soil, the location, the microclimate and the low yields per hectare allow this grape variety to express itself perfectly on the Umbrian hills. Like all the estate’s red wines, the Syrah is kept simple: pure fruit, no oak, maximum expression of the grape.
The grapes are harvested by hand in September and fermented at a controlled temperature in stainless steel. Ageing takes place exclusively in steel and then in the bottle, to preserve the characteristics of the grape variety as intact as possible. In the glass, the Syrah is an intense ruby red. The nose offers red carnation, forest fruits and spices, complemented on the palate by sweet and spicy gingerbread. The tannins are present but not overpowering. Immediately enjoyable, and it improves with time in the bottle.
Pairs well with many types of pasta and medium-textured meats. Also a lovely match with cod. Serve at 16°C.
