Fattoria Valacchi's Chianti Gelso DOCG is a refined interpretation of classic Chianti, harmoniously blending tradition and modern elegance. This wine is made from the finest Sangiovese grapes, complemented by a touch of Cabernet Sauvignon, sourced from vineyards located between 250 and 300 meters above sea level in Barberino Tavarnelle, in the heart of the Chianti region. Harvested in late September, the grapes undergo traditional fermentation in stainless steel tanks at a controlled temperature of 28°C for fifteen days, ensuring maximum extraction of color, aroma, and structure.
After fermentation, the wine is aged for twelve months in second-fill French oak barrels and then refined in the bottle for a further four months. The result is a vibrant ruby-red wine with a refined bouquet of violets and ripe cherries. On the palate, the Chianti Gelso is soft and balanced, with silky tannins and a fresh note that enhances its fruity character. The wine combines intensity with elegance, and its persistent aromas and harmonious structure make it a perfect representative of the Tuscan terroir.
The Chianti Gelso DOCG is ideal for any occasion where refinement is desired. It pairs beautifully with grilled red meat, pasta with rich tomato sauces, and semi-mature cheeses. Its balanced character also comes into its own with Tuscan dishes like pappardelle al cinghiale or a simple bruschetta with olive oil and rosemary. Serve this wine at 18–20°C to fully experience its full aromatic richness and velvety texture.
