The Vieilles Vignes is a noble wine sourced from select vineyards with old vines of the indigenous Nebbiolo biotype Picotendro. The grapes are harvested at an advanced stage of ripeness, and a small percentage of Fumin is added, which helps soften the tannins and increase the color intensity.
The Vieilles Vignes represents a niche wine variety in local winemaking tradition. Historically, in the best years, winegrowers would reserve a small portion of their last-harvested grapes, picked in November, for later vinification.
The wine has a ruby-red color with garnet reflections. The aroma is full and elegant, with notes of sour cherry, blueberry, and rosehip. The palate is dry, rounded, and harmonious. The alcohol content is 14.5%, the total acidity is 6.22 g/l, and the dry extract is 32.60 g/l.
The grapes are composed of 95% Nebbiolo and 5% Fumin. The vineyards are situated on steep, well-drained, gravelly slopes, facing south to southeast, at an altitude of 350 to 400 meters above sea level in the municipalities of Donnas, Perloz, Pont-Saint-Martin, and Bard. The vines are grown in a pergola system, with a density of 2,500 vines per hectare and a yield of 60 quintals per hectare.
The harvest takes place between the first and second decade of November. After vinification in stainless steel tanks, the wine is aged for 24 months in 25-hectoliter oak barrels.
The Vieilles Vignes pairs perfectly with red meat, game and very mature cheeses.
