The Cincinnato Vino Rosato is a biodynamic rosé made from Barbera and Dolcetto that is best drunk as an aperitif and with summer dishes. The wine is fully organic and biodynamically certified. Only 900 bottles of the wine are made annually. The grapes for this wine were harvested by hand and carefully transported in small crates, guaranteeing the quality of the grapes. The yield per hectare is low which makes for extremely concentrated grape bunches. Fermentation of this wine is spontaneous and carried out exclusively with wild yeasts. This process took place in a semi-underground cellar with constant temperature and humidity, which contributed to the wine's unique flavour. After fermentation, this wine was aged for 10 months in stainless steel tanks, which contributed to its freshness and liveliness. Alcohol content is 14.22%, total acidity is 6.46 g/l, and dry extract is 23.5 g/l. The total sulphite content is modest at 50 mg/l. To appreciate the full flavour, it is recommended to serve this wine at a temperature between 12°C and 14°C. This Cincinnato Rosé comes from the beautiful vineyards located in the hills of Rocca Grimalda, with a south-west and south-east exposure, calcareous soils and an altitude of 300 metres above sea level. A rosé with spice for any summer occasion.
