The 'Gesusio' Dolcetto di Ovada Superiore DOCG is a biodynamic red wine made from 100% Dolcetto that goes great with a hearty pasta. The wine is fully certified organic and biodynamic and less than 700 bottles of it are produced every year. The grapes for this wine are hand-picked and carefully transported in small crates to ensure quality. The yield per hectare is low so all the vines' energy is focused on a small number of grapes, bringing a unique intensity to this wine. The fermentation and maceration of this wine are purely natural. Fermentation is spontaneous, exclusively with wild yeasts. There is a long maceration period with the grape skins, which contributes to the wine's depth and structure. After vinification, this wine has aged for 12 months in old tonneaux, followed by another 14 months of aging in bottle before being released on the market. The alcohol content is 13.25%, with a refreshing acidity of 5.79 g/l and a dry extraction of 26.7 g/l. The total sulphite content is minimal, just 23 mg/l. To fully enjoy the flavour, it is recommended to serve this wine at a temperature between 17°C and 18°C. The grapes for Gesusio Ovada Riserva come from the old "cru" called "Bernarda/Vallegrande", located on the south side of the Rocca Grimalda hill, at an altitude of 300 metres above sea level, with calcareous white soils.
