Cantina Sabaini's Corvina Veronese IGT is an elegant and balanced red wine that takes its character from the rolling hills of Illasi and Oasi Musella, in the province of Verona. The vineyards are at an altitude of 175 metres and benefit from both a north-easterly and southerly exposure, allowing the grapes to achieve perfect ripening. The Corvina grapes are harvested by hand in October, just when they have reached their phenolic ripeness. The soil, rich in alluvial deposits and pebbles, gives the wine a subtle minerality and freshness.
After destemming and crushing, the grapes are fermented for eight to 10 days at controlled temperatures of 22 to 26Ā°C, followed by gentle pressing. The wine then matures in stainless steel tanks to preserve its pure fruit expression. In the glass, it shows a ruby red colour with purple hues. The nose is refined and intense, with aromas of ripe red fruit and subtle spicy notes. On the palate, the Corvina Veronese is pleasantly fruity, supple and perfectly balanced, with a harmonious finish that invites the next sip.
This wine is excellent with flavourful dishes such as pasta dishes with tomato sauce, roasted meat or medium-aged cheeses. Corvina also shows its versatility with a risotto with mushrooms or a spicy sausage dish. Serve it lightly chilled at 16-18Ā°C to fully show off its fresh fruitiness and soft structure.
