Ômina Romana's Diana Nemorensis I is an elegant and balanced Bordeaux cuvée of Merlot, Cabernet Sauvignon and Cabernet Franc, dedicated to Diana Nemorensis, the Roman goddess of the hunt and protector of femininity. This wine symbolises the power, grace and vitality of nature itself. The grapes are harvested in the second half of September, at the time they reach their ideal ripeness, after which they are carefully fermented in stainless steel tanks to retain their natural freshness and fruity character.
After fermentation, the wine matures further in stainless steel, with a small portion in French barriques for extra roundness and complexity. It then receives three months of bottle aging to fully harmonise its aromas. In the glass, it shows a bright, ruby red colour. The bouquet is intense and fruity, with ripe notes of red plum, blackcurrant and cranberry, complemented by sweet spiciness, vanilla, clove and a hint of dark chocolate. On the palate, it is medium-bodied, dry and juicy, with accessible tannins and a velvety, round texture that makes it exceptionally pleasant.
The Diana Nemorensis I is a versatile wine that goes extremely well with grilled red meat, pasta dishes with rich sauces or aged cheeses. Serve at 15-18 °C to fully appreciate its harmonious balance of fruit, spiciness and elegance.
