Ômina Romana's Merlot - Lazio IGT is a wine of classic, refined elegance, born from the careful cultivation of four different Merlot clones on as many soils with varying compositions of clay and loam. Each clone is harvested separately and vinified at the peak of ripeness, resulting in a wine of exceptional complexity, depth and rich phenolic structure. This meticulous approach reflects Ômina Romana's commitment to precision and craftsmanship at every stage of the winemaking process.
The grapes are harvested and selected entirely by hand, after which they are lightly crushed. The must undergoes a 48-hour cold soaking to concentrate aromas and colour, followed by fermentation in temperature-controlled stainless steel tanks and a 10- to 15-day skin soaking. Malolactic fermentation takes place in oak barrels, followed by a 12-month ageing in second-use French barriques with regular bâtonnage. After blending, the wine rests for a further 12 months in bottle, allowing its structure and elegance to fully develop.
In the glass, the wine presents itself with a deep, ruby red colour. The nose is intense and layered, with notes of cassis jam, clove and a hint of cinnamon. On the palate, it is supple, balanced and round, with velvety tannins that fill the palate and leave a long, harmonious finish. The Merlot - Lazio IGT is a wine of refined power, perfect to pair with roasted red meat, game dishes, lamb or aged cheeses. Serve at 15-18 °C to fully experience its elegant balance and aromatic depth.
