The ‘Retrò’ Vino Rosso is a biodynamic red wine made from 100% Dolcetto. This distinctive wine is certified organic and biodynamic, with fewer than 600 bottles produced each year. It pairs particularly well with pork stews and grilled vegetables. The grapes are hand-harvested and carefully transported in small crates to preserve their quality. With yields of less than 30 quintals per hectare, the grapes are especially concentrated and rich in flavour. They come from different plots across the hills of Rocca Grimalda, contributing to the wine’s complexity and depth.
The winemaking process is notably artisanal. The grapes are foot-crushed and then macerated together with their stems. Fermentation occurs spontaneously in an underground cellar using indigenous wild yeasts, which contribute to the wine’s distinctive character. Maceration lasts between 14 and 20 days, resulting in a deep colour and rich flavour profile. Following vinification, the wine matures for 12 months in old tonneaux and barriques, followed by an extended period of bottle ageing before release.
The wine has an alcohol content of 13.66%, fresh acidity of 5.70 g/l, and a dry extract of 30.5 g/l. Its total sulphite content is exceptionally low at just 9.0 mg/l. For the best tasting experience, serve the ‘Retrò’ at 16–18°C. This wine embodies the essence of artisanal winemaking and offers a distinctive experience for discerning wine lovers.
