Dame 2021 is an elegant and characterful sparkling wine made from 100% chardonnay, from the slopes around Holset in the South Limburg Hill Country. The grapes are sustainably grown, carefully hand-picked and pressed as whole bunches, resulting in a pure base wine full of refinement. This blanc de blancs is made using the traditional method, with a second fermentation in the bottle and no less than 24 months of aging on yeast.
On the nose, Dame offers fresh notes of citrus and blossom, complemented by a subtle hint of vanilla. The taste is layered and complex, with a delicate wood touch thanks to the special vinification: 40% of the base wine was fermented and aged in French oak, 40% in stainless steel and 20% in ceramic. The result is a sparkling wine with depth, structure and lively acidity.
Destined in August 2024 as brut nature, i.e. with no added sugars (0 g/l dosage), Dame 2021 is the perfect wine for lovers of dry, pure style. Serve as an aperitif or with refined dishes such as oysters, ceviche or a salad with goat cheese. A distinctly Limburg expression of top quality.
