Novo 2022 is a sparkling quality wine from Holset in southern Limburg, made using the traditional method. This fresh extra brut is made from souvignier gris (85%) and johanniter (15%), grapes grown sustainably and picked by hand on the rolling hills around Holset. A gentle pressing of whole bunches is followed by a refined vinification in Lemiers, with 70% of the base wine fermented and aged on stainless steel, 20% on Burgundy oak and 10% on ceramic.
The wine matures for 24 months on yeast and is then disgorged as extra brut with a light dosage of 3 grams per litre. This produces a sparkling wine with a lively mousse and nice balance between fresh acidity and a soft finish. In the glass, Novo shows elegantly, with aromas of citrus, wild peach and spring blossom, and a refined structure that feels subtly creamy thanks to the malolactic transformation.
Novo 2022 is ideal as an aperitif, but is also excellent with light fish dishes, delicate vegetarian dishes or seafood. A festive glass with a pure Limburg character.
