Convento is Tenuta Pescarina's organic Pecorino Superiore, from the hills around Spoltore. The vines grow on clay-limestone soils with gravel, on carefully chosen slopes where the grapes develop their fresh and aromatic character. After harvesting, the grapes are gently pressed and a cold settling of the must follows. Fermentation takes place in stainless steel at controlled temperature for 15 to 20 days, after which the wine matures for five months on the fine lees and a further two months in bottle. This process creates a wine that is pure, elegant and harmonious, bringing out the best of the Pecorino grape.
In the glass, Convento shines with a brilliant straw yellow colour. The nose is intense and refined, with aromas of ripe citrus, white flowers and mineral notes. On the palate, the wine presents itself fresh and crisp, with lively acidity and an elegant, aromatic finish. It combines expressiveness with finesse, making it both refreshing and gastronomically interesting.
This Pecorino is an ideal companion to refined fish dishes, seafood, light pasta and summer salads. Its fresh and elegant character also comes into its own with young cheeses or as a stylish aperitif.
